The last day of July already!

Another batch of veggie crackers finished. I love how they turn out with the colours green on one side, red on the other side. I snacked on some for breakfast with lemon juice.

organic cantaloupe

3:16 PM Definitely ready for some rejuvelac and some cantaloupe.

organic peach

organic pecan nuts

4:21 PM Peach with a few pecans… a super combo!

5:01 PM a tall glass of lemon juice mixed with water. I was busy outdoors nurturing the plants. They have a lack of sun where the gardens sit and also a lack of heat to deal with. They are smiling this morning. I noticed how much they perked up last night already; they being basil, sweet pepper and tomato plants.

Supper was late, again, after 7:00 PM. This salad and some lasagna from yesterday was it. The lasagna had turned to tasting like vinegar. It contained no acid except tomato. The cheese made with rejuvelac was layered in the lasagna. The combination with the tomato must have been perfect to ferment overnight into vinegar. The cheese made with rejuvelac better suits my palate yet the seed/nut cheese made with probiotics was tasty in the lasagna and didn't ferment the dish into vinegar. Possibly Ann Wigmore has something to say about this matter; at least about the cheese made with rejuvelac. I have never read anything about her ever using probiotics for food fermentation.

A mango before bed. :)

Lasagna again oo la la

Breakfast started at 11:00 AM with lemon juice and rejuvelac followed by vegetable/fruit juice.
It led to a few veggie crackers.

3:00 PM an enjoyable slow eating small dish of granola with bits of cacao nibs, goji berries, dried currants, dried coconut, sunflower seeds, and ground pecans covered with almond milk.

the pulp from juicing spiced up with herbs and sea salt; will become crackers in the dehydrator

The rye bread is ready to eat. It tastes like rye bread and looks as if it had been baked and toasted, interesting. It is rarely that I eat grains. For years they have been high on my list of poorest choice of food.

rye berries beginning to sprout for the next batch of rejuvelac, beautiful kernels!

freshly made marinara sauce for lasagna

layering the plate with marinara sauce and zucchini

a layer of yam angel hair noodles topped with the seed/nut cheese

decorated with fresh basil leaves is the lasagna ready for the dehydrator

fresh from the dehydrator ready to eat!

Ready to eat a bit past 7:00 PM, the lasagna was divine! I ate seconds then ate a piece of the toast. :)

Sometime during the day I also ate a kiwi, pear and mango. Today definitely saw me eating a lot.(then 3 mangoes before bed! these cases of organic mango are unblemished, extraordinary, very fleshy a rare find)

Also please watch the Forgiveness video…
Could you do the same?

Before Breakfast mejool dates were covered in water to soak. One will be used in making a batch of almond milk.

Almonds that soaked for at least 12 hours were drained and rinsed ready for me to individually peel off the brown skin. It is a process I like to do in case there are any almonds that have turned bad, which happens, and so far in every batch I have soaked and peeled.

I then had fresh squeezed lemon in rejuvelac and water then a glass of fresh juiced vegetable with added apple and orange.

Lunch became crackers with hemp butter and some with lettuce and mustard vinaigrette together with a small cupful of the breakfast juice. It worked.

During the day I also ate two mangoes, a large plum and a kiwi fruit and a handful of crackers and a weensy bit of dehydrated crackers.

It is withdrawal day for the coffee I drank on Wednesday. Withdrawal time after a cup of coffee is always 2 days. I don't get as much accomplished on withdrawal day since I lose my interest in doing. My roomy invited me to a boat ride which I excitedly accepted. It was terrific to get out on the water. We didn't have far to go for water, across the why and down a mile and we were at the boat oaring area of Elk Lake. I return home very tired and hungry for supper.

ground sunflower seeds, pepita and almonds all soaked and processed with rejuvelac

the mixture covered in cheese cloth, set in the warm place atop the dehydrator to ferment into seed/nut cheese

The sprouted rye berries left over from making rejuvelac were ground in the food processor with some added celtic salt, shaped into narrow slices of bread on telex sheets, ready for the dehydrator. They dehydrated over night at a low temperature of 100 degrees F.

The rye toast, vegetable/flax crackers, soaked pecans-- on dehydrator trays.

RahRawRah!

10:10 AM Breakfast, rejuvelac and a mango. I was awake at 6 AM not hungry.

The Rejuvelac

This batch is made with rye kernels. They have proven by far to be the absolute best berries to use to make the rejuvelac. I love the fresh lemony taste which is much fresher tasting than the rejuvelac made with oat berries. Possibly the gluten is important to the fermentation process? I don't know. Someone informed me that rye berries keep on sprouting during the fermenting of the drink. Tomorrow I will make toast from the berries and see how I react to it. Oat berry toast proved to be too heavy for my digestive track. It could be that the oat berries had soured in the process and grown a tinge of bad bacteria.(they smelled quite different than the rye berries smell)

1:20 PM Thought of food propelled me to eat my lunch at this time. I wasn't planning on it. Salad greens with mustard vinaigrette, grape tomatoes and avocado, veggie/fruit juice with half a scoop of phytogreens and some veggie dehydrated crackers.

5:16 snack or supper possibly. Veggie crackers with hemp butter and sliced kiwi fruit. I love the look of the kiwi sliced. The combination was interesting to my palate and a 'must have another time' as well!

10 minutes later it was a bosc pear that popped in with a 'gotta have' feel, so I ate one.

approx 9:15 PM after grocery shopping-- BC cherries :)

The pulp from juicing.

adding ground flax seed

the golden ground flax seed ready to mix into the pulp

the mixture dehydrating into crackers!

It feels like a varicose vein condition that was advancing in my right leg is subsiding. After drinking rejuvelac one day the veins and circulation felt over active with a feeling of pressure all over. The next day they felt better than quite some time. Since then they seem to improve almost daily. I notice the varicose veins markings in my eyes is also clearing (Iridology). Could be I am just doing much less driving. I don't know, yet.

Out and About the Island

A good morning; early, and met with fresh squeezed lemon juice mixed with rejuvelac. More on this batch of rejuvelac tomorrow. There is a definite difference to it.

The rejuvelac sat beside a bowl of orange pieces and bee pollen, covered with almond milk topped and BC cherries. I couldn't finish the whole breakfast so most of the rejuvelac went with me on the road again.

I forgot to take food with me today so I did the cooked challenge. I had an organic coffee, second one this week with a straight up commercial bagel that actually flattened into a spongy dough 'substance' as it cooled after being toasted. That was the weirdest bagel ever to cross my lips. It spoke to me that I was most likely eating inorganic chemicals (of inanimate, not biological origin).

Later I carried on to explore eating a cooked meal, again. Seems to me that January was the last time I decided to eat a cooked meal. I ate Mexican; a vegetarian quesadilla. The picture shows the waitress serving me the meal.

The first few bites held a flavour of sorts and soon it made no sense in my mouth. My mouth became desensitized to the food. That was an odd experience!

The Menu

The table decoration and the dessert menu

I had absolutely no interest in any dessert!

When I returned home, I devoured fresh whole cherries.

During the meal I stayed mindful of my reaction to the cooked eating experience. There was little life left in the food and I maintained a neutral reaction to what I ate. The coffee was deelish!

One of the exciting points of today was finding and purchasing this book!!

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
On my way home I thought about the idea of addiction. I think addiction is merely the denial of having made a choice. An unwillingness to acknowledge a personal choice has been made; pretending that something/someone is in control. That can run deep.
In effect a not knowing how to be at peace with ones choice.
Following this day, a night time dream brought me face to face with an aspect of myself that is no doubt tied up with an emotional component of eating. The dream portrayed this aspect as a domineering man. I was mindful of him in my dream as I was mindful of myself during the cooked meal. He was of a controlling nature, thinking everything around him ought to be as he spelled it out to be. I only watched him; I offer no judgement about his ways. I felt fine with who I am and what I did and the choices I made for myself even though he made it clear that he wasn't.
Breakfast!!
11:58 AM a mango superb! :)
12:50 PM thank you makers of juicers! veggie/fruit juice squeezed from celery, dandelion, black kale, cucumber, carrot, beet, granny smith apple with a half scoop of phytogreen powder added.
Also part of the 12:50 PM meal was a bosc pear spread with hemp butter.
Then at approximately 3:30 PM a friend and I stopped at Bliss Cafe where I ordered a matcha tea, a shot of wheat grass juice and 2 bliss balls. Buzzed again. It is 1:36 AM and I am still energized. Really I don't know if I will get any sleep tonight.
Google Matcha to find out all about it. It is the green tea used in Japanese Ceremonial Tea.
Taken from the web: 'The health benefits of matcha tea exceed those of green tea because when you drink matcha you ingest the whole leaf, not just the brewed water.
One glass of matcha is the equivalent of 10 glasses of green tea in terms of its nutritional value and antioxidant content.'
I don't know, is matcha together with wheat grass juice possibly overkill? A way to get to know oneself is to experiment and find out.
Yeh, it is overkill-overkill for me.
At 3:30 PM at Bliss Cafe I bought two Bliss Balls as well. Drinking the tea and eating the bliss balls stretched over the next hour as my friend Brenda and I went health food store shopping and then back to my residence.
I ate some organic BC cherries before going to bed. It had been 6 hours since the tea, shot of wheat grass and Bliss Balls.
I am starving and look forward to breakfast!
Hey, it is Brenda! Her and I were on a walk at Island View Beach! Brenda is visiting until tomorrow night then heading back east to Ontario where she lives.
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
When I was waiting for the shot of wheat grass juice to be served to me I saw it sitting on the counter and I wanted to drink the juice right away. The server seemed to be moving excessively slowly and was chatting with a visitor and left the little glass of juice sit on the counter where there was risk it would become stale. Now that was hard to watch. I wanted to drink the juice as fresh as possible and it wasn't like he was swept off his feet and couldn't hand it over the counter to me. I asked if that was in fact my juice and was told yes and that it would be given to me when the matcha tea was ready to serve. So I was patient and waited and as soon as the shot of juice was set in front of me I tossed it into my mouth and swallowed. That seemed like the only sane thing to do.

It was mindfulness at work again. I was well aware of all my feelings and thoughts the entire time. I also listened to myself whine a little complaint to Bren.
There is a lot of funny stuff that spills forth during each day. The funny stuff is what we make of the goings on.

A Perfect Vinaigrette

The organic rye berries that grew into these spectacular sprouts were purchased at 'Planet Organic', Victoria B.C.

First thing this morning is to rinse these beautiful sprouted rye berries, cover with water and set them to ferment into a new batch of Rejuvelac! Wow, just look at those thriving delicacices! (click and double click on the picture to enlarge)

The jar containing the rejuvelac mixture is covered with double-layered cloth and set in the indoor garden unit. The grow lights provide heat that will aid the fermentation process.

11:30 AM today’s eating commenced with a glass of freshly squeezed lemon juice diluted with water, peaches cut up and mixed with pepitas that were soaked and dehydrated; both covered with almond milk make a fresh dish that sets a pace of liveliness.

12:56 PM a mango!

3:43 PM 2 tunaish rolls-- walnut salad layered with red onion and cucumber, using cabbage as the wrap.

5:58 PM A bosc pear eaten with hemp butter. It is a terrific combination with the smooth rich hemp butter spread upon the sweet pear.

7:31 PM salad of mixed young greens and avocado with a sprinkling of hemp seeds drizzled with a potently scrumptious dressing(!) whipped of lemon juice, salt, chopped garlic, stone ground mustard, black pepper and avocado oil.

How to make the dressing.

8:56 PM to gratify a sorbet craving I enjoyed eating a juiced combination of frozen strawberry, mango and almond/coconut.

It has been two days since ingesting a coffee together with something not only cooked but sugar sweet. Coffee withdrawal was a cinch compared to coffee withdrawal when I was more toxic. The symptoms felt 75% lessoned. A left over effect was a gnawing feeling to eat something cooked. I felt that the feeling could be satisfied with cooked quinoa which I prepared and ate a small bowlful with a little butter, salt and peppered. The quinoa was eaten with my supper salad.
It is merely the facts.
